High Relative Humidity during the ripening process significantly reduces injury to the fruit after ethylene gassing has taken place.  The fruit also looks nicer and more appealing when ripened under high humidity and also aids in helping the fruit maintain its weight, which is important since fruit is sold by weight.

Sensors are available for the detection of ripening gas (ethylene), carbon dioxide, temperature, relative humidity, pulp temperature and oxygen. Each sensor provides an analogue output signal and is housed in an enclosure that provides suitable protection against water and dust ingress (IP651). Sensors can be interfaced with other monitoring and control systems, including those manufactured by third parties.
